What is a High Heat Emulsion, and how is it different from a standard flavor emulsion?
Nature's Flavors offers two emulsion tiers. A standard flavor emulsion is a water-based, gum-acacia system that stays stable through heat and vigorous mixing — a great choice for baked goods, cooked candy and gummies, hot-fill syrups, and dairy. A High Heat Emulsion (“Flavor Emulsion for High Heat Applications”) is purpose-built for the most demanding, sustained heat: it is engineered to release its flavor slowly and hold up through direct high heat such as the hard-candy stage (about 350–375°F) and roughly 30 minutes at 375°F. Choose a High Heat Emulsion for hard candy, boiled sugar, and extended high-heat baking; a standard emulsion is ideal for everyday baking, dairy, and confections. Both are water-based gum-acacia systems that add some opacity, so choose an extract when the application is a clear beverage. High Heat Emulsions are available in natural and organic lines, in 100+ flavors.
